Taste It Las Vegas! Mundo, a Spanish HAUTE Spot

by Syren Vaughn (Las Vegas, NV USA)

The Las Vegas summer sun has not even crept into the Southern Nevada sky, yet you can still feel the heat from the hottest restaurant in town. Mundo, A Culinary Haute Spot is taking Las Vegas by storm and is burning a place in the hearts of locals and tourists a like!

Mundo is the first upscale Mexican restaurant in the downtown district of Las Vegas and resides in the prestigious Las Vegas Design Center at the World Market Center. It is a distinctive and unique effort between partners, George Harris, Irma Aguirre, Mingo Collaso and Executive Chef Robert Solano.

Mundo boasts about it’s flavorful and authentic Mexican cuisine, its’ simple and classic old world Mexican decor with full Las Vegas glam and a top of the line service staff attentive to your every need.

After being seated, my tour guide of Mexican cuisine, greeted me and I was ready to start this ethnic journey. He took the reigns willingly and led me through to a cocktail sensation. First off was a Spanish Kiss cocktail, one of Mundo’s extensive signature drinks. It was drinking pure silk. Absolut Mango vodka, Peach Schnapps and Cava blended together to create a pure and refreshing classic.

While sipping on my drink, the waiter asked if I would be willing to let him continue the tour and I was happy to oblige.

The second stop was a mouth-watering melt down! The Ahi Tuna Tostada! It reminded me of a traditional style ceviche, which is a popular sushi style dish on the coastal regions of South America. Ahi Tuna covered the tostada, blanketed in a spicy red chili vinaigrette, dusted with fresh herbs. The tuna melts in your mouth! If you are not one for a spicy dish, don’t worry. The heat of the pepper and sweetness of the tuna complimented both sensations eloquently!

Stop three on my tour through classic Mexican cuisine, was an off menu item. Beef Enchiladas, a simple and classic dish, but kept in the true HAUTE style of Mundo! Served on a bed of red enchilada sauce and topped with cream and herbs, the beef was tender and mouth-watering. An amazing blend of flavors!

The last stop of the tour was a sweet twist on a classic! Banana and Rum filled Empanada. It was a caramel, flakey, sticky ball of flavor! I couldn’t stop eating it!

Executive Chef Robert Solano appeared from the kitchen and stopped by the table to chat. He was extremely gracious with his time and very humble about his creations. He is an award-winning chef that has captured the hearts and pallets of Las Vegas! Mundo is taking Vegas to a new level in the culinary world! Stop by and experience the HEAT for yourself!
